Food Trucks

Holy crow. Another food post. I know, I know... you must think I am a foodie but I promise I'm not.
(in case that wasn't clear I am being completely sarcastic)

Our church had our fall kick off today and to celebrate the occassion we invited some local food trucks to come share their deliciousness with us. It was my first experience with food trucks and let me just say:
mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm.

It was amazing. I got a ham and cheese empanada and a barbecue chicken empanada and some mini cup cakes. It was so good. Do you have any favorite local food trucks? (if they are in Orlando PLEASE SHARE!)

girls night

Let me tell you something about my friend Gigi: I am completely confident that we will be great friends for the rest of our lives. We have this amazingly unique relationship. We are really more like sisters. For example, we make plans all the time but constantly cancel on each other because something else comes up. In our friendship it is understood that we will always be friends no matter what. So if she gets invited to a party or I want to go to bed early (did I mention how much more exciting her life is?) we know that there are no hard feelings, no awkward "why doesn't she want to hang out with me" moments, not even apologies. It's a complete confidence in our love for each other and it is a beautiful thing.

Another great thing about Gigi is that she lives in a teeny tiny adorable apartment with a closet sized kitchen. So when she wants to cook she does it at my house. (You may remember her amazing new years meal.) Last night she made us beef stew with collard greens, carrots, onions, squash and potatoes. It is so lovely to catch up with her over a glass of wine and a bowl of home made soup.

What a perfect Thursday night.

New Years

This year my dear friend Gigi made a traditional southern new years meal for us.

The meal was made up of ham, collard greens, black eyed peas, cheddar cheese corn bread and a seven layer salad. Each food represents something for the new year: ham for health (oh, the irony), collard greens for pocket money, black eyed peas for saving money, corn bread for a plentiful harvest and salad was added for flavor. I ate as much as I could because I could definitely use some help in all those areas.

So here it is-
food & resolution:
ham + more yoga
greens/peas + earn more/spend less
corn bread + finishing projects*
salad + thoughtfulness**

*My harvest is the projects I have already started. This is going to be a process because I have A LOT of loose ends to tie up, literally. To be more specific I have to finish two sweaters, one hat, one embroidery piece, four stuffed animals and three cell phone cozies. Also, I joined Project Restyle (which I am super excited about). You can find out more info from the link on the left.

**To add flavor to my life I am going to be more thoughtful about my decisions, goals and life in general. I feel like I am in a funk and want to more clearly define who I am and what I stand for.

Here's to a new year, new goals and new opportunities!
